gelato mix ......................................6qt (5.71 l) whipping cream..........................26fl oz (0.78 l) sweetened condensed milk..........2lb 3oz (1 kg) sugar..............................................7oz (0.2 kg) honey..........................................13oz (0.38 kg) espresso coffee............................2qt 4fl oz (2 l)Mixing directions: 1. Dissolve honey into espresso. Cool and set aside. 2. In a cooking pan heat milk and cream. 3. Blend stabilizer separately with some sugar and add to mix. Stir continuously to avoid clumps. 4. Add remaining sugar and cond. milk. 5.Pour mix into batch freezer and freeze. 6. When freezing is close to end, pour the honey-espresso blend and complete the batch. 7. Decorate with espresso beans and honey. |
